Indian sweets have short ingredient lists — milk, sugar, ghee, flour, nuts. The recipes are frequently five lines long.

They're also among the most technically demanding things in the repertoire, and the difficulty is of a specific kind: it lies in judgements that can only be described approximately.

The reduction problem

A large category of sweets depends on reducing milk — to khoya, to rabri, to the base of countless preparations.

Reduction is simple in principle: simmer milk until water evaporates and solids concentrate. In practice it takes a long time, requires constant attention, and passes through stages that are difficult to identify without having seen them.

Milk reduced to a third is not the same as milk reduced to a quarter, and recipes that specify a time rather than a state are unreliable because the rate depends on the pan, the heat and the milk.

The failure modes: scorching at the base, which taints everything; and stopping too early, which produces a sweet that never sets.

The technique that helps most is a wide, heavy pan and continuous scraping of the sides, where solids accumulate and would otherwise brown and be stirred back in as bitter specks.

Sugar syrup stages

The other major source of difficulty. A great many sweets depend on sugar syrup at a specific concentration, traditionally described by thread consistency — one thread, two threads, and so on, judged by drawing syrup between finger and thumb.

These correspond to temperature ranges, and a thermometer is genuinely useful here despite being untraditional.

The margins are narrow. A syrup a few degrees under produces a sweet that won't set; a few degrees over produces one that's hard or crystallised.

Complicating things, syrup continues cooking after removal from heat, and the temperature rises steeply near the end. What takes ten minutes to move fifteen degrees early on may move five degrees in twenty seconds at the top.

Crystallisation

The specific problem behind many failures.

Sugar syrup is a supersaturated solution and wants to crystallise. Any nucleation point — an undissolved crystal, a rough spot on the pan, agitation at the wrong moment — triggers it, and it propagates through the whole batch.

The result is grainy where it should be smooth.

Preventions: making sure all sugar is fully dissolved before boiling begins, not stirring once boiling, washing down the sides of the pan, and adding a small amount of acid or glucose which interferes with crystal formation.

Some sweets deliberately induce controlled crystallisation for a specific grainy texture, which is a different technique requiring the syrup to be beaten at a particular stage.

Ghee and its role

Ghee does more than add flavour in these preparations.

It coats flour particles, preventing gluten development and producing the crumbly texture characteristic of many sweets. It carries fat-soluble aromatics from cardamom and saffron. And in preparations where the mixture is cooked in ghee, the point at which the fat separates back out is a visual cue that the cooking is complete.

That separation cue appears constantly in Indian cooking generally and it's a reliable indicator: when the mixture stops absorbing fat and the ghee pools at the edges, the moisture has gone.

The humidity factor

Rarely mentioned in recipes and genuinely significant.

Sugar is hygroscopic. Sweets made on a humid day absorb atmospheric moisture and may never set properly. The same recipe on a dry day works.

This is why traditional sweet-making has seasonal patterns, and why professional confectioners work in controlled conditions.

For home cooking it means that a failure may not be your technique. If a sweet refuses to set in monsoon conditions, that's a plausible explanation.

Where to start

Some preparations are considerably more forgiving than others and are worth attempting first.

Ladoos made from besan or coconut, where the texture tolerance is wide and there's no syrup stage.

Halwa, which is essentially cooking a starch in fat with sugar and liquid, and which can be adjusted as you go.

Barfi from condensed milk, which skips the reduction stage entirely. Purists object and it works.

The ones to leave until later are anything requiring a precise syrup stage, anything requiring milk to be curdled and shaped, and anything deep-fried and then soaked, where the timing between the two determines whether it absorbs properly or turns to mush.

The honest assessment

These are professional techniques, developed by people who make the same thing daily for decades and who judge by sight, sound and feel.

Home attempts get better with repetition of a single item rather than with breadth. Making one sweet ten times teaches more than making ten sweets once, because the judgements are specific and only develop through seeing the same transitions repeatedly.

And buying good sweets from someone who does this professionally is an entirely respectable option that requires no apology.
