Cutting salt sounds like a matter of using less at the table, yet people who do that often find their intake barely moves. The reason is where the salt actually is and what it is doing there.

Most salt is already inside the food

The salt added during cooking and at the table is a modest share of a typical day's intake, with the majority arriving pre-dissolved in bread, cheese, cured meats, sauces, snacks and prepared meals.

Because it is dissolved into the product rather than sitting on the surface, it is not tasted as saltiness in the way a sprinkling is, and it registers as flavour instead.

That invisibility is why intake can stay high in a household that has genuinely stopped reaching for the salt cellar, and why the panel on a packet is more informative than the kitchen habit.

Salt performs jobs beyond taste

In bread it controls the rate of fermentation and strengthens the gluten network, so removing it changes rise, crumb and the time the dough needs before baking.

In cured and preserved foods it draws out water and makes the environment hostile to spoilage organisms, which is a preservation function rather than a seasoning one.

A manufacturer reducing salt therefore has to solve a technical problem as well as a flavour one, which is why reformulation across a category takes years rather than a production run.

Taste adapts slowly in both directions

Perception of saltiness adjusts to habitual intake, so food that tastes correctly seasoned to one person tastes flat to another whose usual intake is higher.

That adjustment runs in both directions but takes weeks, which means an abrupt reduction is experienced as food becoming worse rather than as a shift in the palate.

Gradual reduction across a whole category avoids this, because no single product changes enough at once for anyone to notice the step.

Substitutes solve part of the problem

Potassium-based replacements deliver a similar sensation but carry a metallic edge at higher concentrations, and they are unsuitable for some people on medical grounds.

Acid, aromatics and umami-rich ingredients can make a lower-salt dish taste complete, because they occupy attention that saltiness would otherwise have to hold on its own.

None of these reproduce salt's preservative and structural effects, so substitution works better in home cooking than in manufacturing.

Labels describe sodium in more than one way

Panels may report sodium rather than salt, and the two are not the same number, which makes comparison across products harder than it looks.

Front-of-pack colour coding compresses this into a judgement per portion, so a small declared portion can present better than a larger real one.

Anyone advised to restrict sodium for a medical reason should work to figures agreed with their clinician rather than to general guidance.
